The cart

One tawa,
one dish.

It started as a hand-cart on a street corner in Ahmedabad selling a single bhaji. The vegetables were bought that morning and mashed down over four hours until the masala stopped tasting of individual spices and started tasting of one thing.

Regulars gave it the name. Honest — because the plate looked like what you paid for.

In the kitchen

Nothing frozen.
Nothing coloured.

Masala is ground for our own kitchens. Paneer is set, not bought in blocks. Breads go into the tandoor after you order, which is why a full table takes about thirty-five minutes and why we would rather you waited.

Every kitchen is pure vegetarian. Jain and Swaminarayan preparations run on their own boards and pans — ask, and the counter will walk you through what changes.
