Fifty years ago we cooked one dish on one hand-cart. The recipe hasn't moved. Pure vegetarian, cut and cooked the day you eat it, and never a drop of food colouring.

Our story
In 1975 the family started with a single hand-cart, one tawa and a bhaji that took four hours to build. People queued. The cart became a shop, the shop became a chain, and eventually the griddle reached the south-west side of Chicago.
What travelled with us is small and stubborn: masala ground for our own kitchens, vegetables cut the same morning, and a rule that nothing is coloured to look better than it tastes.
